Ibiza’s raison d’etre has always been due to a white substance loved by the masses; clamoured for, sought after, fought over. I am of course talking about salt. Without it life is bland. Without it there would be no flavour. I know someone who has given up salt. His eyes have become dull, his conversation drab, his dress sense dreary. Without salt, what’s the point?

Salt has the most extraordinary effect on food. Pour salt over a big fillet of cod and then hang it out to dry and you get a piece of fish that is like leather. Cover a seabass under a mountain of salt and bake it and the result is flesh that is moist beyond compare. So, one process draws out the moisture thus enabling it to be stored, the other process keeps the moisture in and must be eaten pronto.

Fish baked in salt is an Ibiza specialty. Not surprising given the vast quantity of salt available and the high quality of the fish (at the moment anyway, who knows what will be available in 10 years). Continue reading Seabass and salt

How often do you do what you really want rather than tick off the next errand, make the next phone call or write the next email to satisfy someone else’s requirements?

Amidst the hectic swirls of social life, career, kids, social lives, appointments, house keeping, health, fitness and life in general, it is all too easy to lose sight of our true selves. Without ever stopping to listen to silence, to be in nature, to let all our responsibilities go, even just for a moment, we ultimately forget who we really are inside. January in Ibiza is renowned for being a blissfully quiet month in Ibiza. With New Year’s resolutions of detoxing and getting fit in full effect for many people, the party circuit slows down and Ibiza’s socialites go into a hibernation of sorts. But there’s always an exception that lures us out of our social slumber… and tonight, it was the birthday party of Pacha’s premier party DJ, Sarah Main.

Held in the slick, suave and sassy new Ibiza town restaurant La Cava – the latest addition to Café Mambo owner Javier Anadón’s successful stable of businesses – the idea was an informal get together, some tasty tapas and celebratory drinks. Throw in a set of decks and some music, and you’ve got yourself a mid-week Ibiza knees up, that everyone still on the island was clamouring to attend. Unless you’ve been living on the moon (and next year even that won’t be an excuse if you believe in a certain Sir Branson), you’ll have heard all about the doom and gloom that is the Global Financial Crisis. Banks closing all around the world, governments bailing out bankrupt companies, unemployment numbers on the rise and here on Ibiza’s terracotta coloured home soil, apparently the tourist numbers were down in 2009. Let me tell you though, it didn’t seem to make getting a reservation at KM5 any easier in the height of summer!

On the good side however (and without getting too technical), interest rates are down, and therefore so are most mortgages and rents, plus there are furious price wars going on between everything from new cars and airfares to mobile phones and gym memberships. So provided you have a job, you may well be in a better position than you were before La Crisis reared her pesky head last year when it comes to getting a good deal. Continue reading Fashion crisis? However throughout the festive season, when the food and wine are flowing, the chocolates keep emerging, along with the brandy, the cake and the wine (again) things can go from less to more without you even batting an eyelid – before you know it, it’s January 6th, 2010 and there are still leftovers begging to be eaten in the fridge! While people all around the globe were busy fighting the high-street hordes in search of the perfect last-minute gifts, dealing with raging hangovers in order to have Christmas dinner with the in-laws and having to dress to deal with temps either in the minuses (or reaching 40 for those in the southern hemisphere), Miss W here had an epiphany. The Christmas turkey that is…

Recently it seems that cooking your stuffing separately to the bird has become fashionable. And with good reason – it is delicious that way. I like the traditional method as well and it has its benefits when it comes to the cooking but I think on the whole I prefer it cooked separately. If you are going to do this then it is a good idea to stuff the cavity with something nice but disposable too so the breast doesn’t cook from the inside as well. Something nice could be a big lump of bread soaked in wine, thyme, black pepper, lemon zest, the lemon itself, juniper berries. This will encourage even cooking throughout.
